Two Hundred and Eighty-Nine

Tuesday, March 29

Fajita.

What did I say about fajita variants?! I love them. This one is chicken and peppers and tomatoes and rice and an avocado cream and hot sauce and I cannot tell you how hungry I am right now.

Avocado.

Half an avocado, drizzled with a garlicky red wine vinaigrette and topped with green onions: the perfect appetizer.

Salad.

Avocado, grapefruit, caramelized onions, and Romaine lettuce tossed with a light olive oil vinaigrette. Refreshing and tasty.

One Hundred and Forty-Nine

Tuesday, November 9

Toast with avocado.

Simple, but delectable. Smashed avocado on whole wheat toast, sprinkled with salt & pepper, served with tomato.

Sushi.

Thanks to Alison Farrier for hosting a great sushi party; after making the same conventional rolls over and over, we started to get a bit more creative. Her masterpiece is featured front and center here: beef jerky sushi.

My creations are left: peanut butter & jelly sushi, and right: cream cheese, avocado & potato chip sushi. The first tasted like a pb&j sandwich, which I suppose is what I was looking for. The second, though....well that was just delicious. Just ask Mike.

Seven

Avocado ice cream.

Even I thought this would be at least somewhat gross on some level, but it ended up being completely delicious. Lime juice and tequila provide the main flavors. Refreshing and wonderful.

I approve this dessert.
