Rice & dumplings.

Chicken & cilantro dumplings, served with white rice and a cilantro pesto. For the pesto, I used blanched almonds rather than pine nuts, and obviously cilantro in place of basil. I didn't love it, but it was good with the rice and I think it complemented the dumplings (which were delicious) well.

Alysia and I went to one of her favorite Mediterranean restaurants and we had some of the best food ever. Served with rice, pita, hummus, salad, hot sauce and garlic sauce. MAN I love Mediterranean food.

Tacos.

Dinner at the Budges' before the "shopping spree" teen activity. Corn tortillas and hard taco shells filled with beef, lettuce, tomato, onion, cilantro and cheese, with black beans and rice on the side. One of my favorites!

Upon returning home from my trip to San Francisco, my first stop was El Pollo Loco, definitely on my Top 3 Favorite Fast Food Places list. Thanks, Mom & Dad!!

Topped with spicy avocado sauce and cilantro, served with rice and pinto beans.

Auntie Joy is amazing! Chicken enchiladas with rice and all sorts of toppings, including fresh avocado, lettuce, tomato, black olives, green onions, sour cream, salsa, enchilada sauce, etc.

Cheesy chicken & rice casserole.

Sometimes I make things at work and then it's so delicious I make it at home for dinner. I had that "cheesy chicken and rice casserole, possibilitiiieess" song stuck in my head all day, so that's what I called this. Which works, because it's a cheesy casserole with chicken and rice. And broccoli. And worcestershire sauce and sage.

"Dhanyavad" to Moms for this fantastic Indian dish. Coconut milk, tomatoes, potatoes, perfect blend of spices; served over Jasmine brown rice, topped with cilantro...really wonderful.
