Two Hundred and Five

Tuesday, January 4

Southwestern casserole.

Bell peppers, corn, chili beans, and a bunch of other stuff that I was too busy stuffing my face with to stop and identify. Really delicious. Served with a cranberry/orange/almond salad and balsamic vinaigrette. Nicely done, Janice Walsh.

One Hundred and Forty-Eight

Monday, November 8

Cheesy chicken & rice casserole.

Sometimes I make things at work and then it's so delicious I make it at home for dinner. I had that "cheesy chicken and rice casserole, possibilitiiieess" song stuck in my head all day, so that's what I called this. Which works, because it's a cheesy casserole with chicken and rice. And broccoli. And worcestershire sauce and sage.

One Hundred and Twenty-Seven

Monday, October 18

Enchilada casserole.

Layers of corn tortillas, enchilada sauce, cheese, tomato, black beans and lettuce (which I usually wouldn't include but it was pretty good), baked for half an hour and then topped with avocado, sour cream, hot sauce and cilantro.

Sixty-Seven

Thursday, August 19

Spinach cheese casserole.

A classic Anderson dish (something we have in common), this casserole features sausage, cottage cheese, parmesan cheese, mozzarella cheese, croutons, tomato sauce, herbs, and possibly most importantly, more mozzarella cheese. I mean spinach.

Props to Michael for providing it.
