Salmon bites.

Baked phyllo cups filled with a rosette of mascarpone cheese and topped with smoked salmon, capers, chives and a drizzle of lemon juice. I think I ate, oh, maybe 20 of these.

Two Hundred and Ninety-Nine

Friday, April 8

Eggs Benedict.

Coddled egg, julienned smoked salmon, creamy hollandaise and dill on top of a hamburger bun (so soft and amazing). One of my favorite dishes.

Two Hundred and Eighty-Five

Friday, March 25

Salmon stew.

Potatoes, celery, onions, chunk of salmon and all kinds of other things. This was a surprising hit.

Salmon cakes.

Went to Ruby Tuesday for dinner. Moist and tasty salmon cakes with lemon butter sauce and sides of mashed potatoes and asparagus.

One Hundred and Seventy-Eight

Wednesday, December 8

Lox.

Thinly sliced smoked salmon atop mascarpone-spread pumpernickel, with a sprinkle of chives and capers and a squeeze of lemon. I don't like many different kinds of fish, but salmon is definitely one of the few exceptions.

Grilled salmon.

Thanks to Dad for the star of this meal; the man knows how to grill. I've never been a big fish fan, but salmon has always been the exception. And TY, Mom, for the broccoli and brown butter pasta. So good.
