BBQ chicken soup.

I took all the ingredients typically found in a BBQ chicken spice rub and I put them in a soup, including the chicken. It was sweet and spicy, really deep flavors.

Creamy sweet potato & rosemary soup.

This was waiting for me when I got back from my trip. I'm not the biggest sweet potato fan but this was really tasty. Served with olive oil & rosemary sourdough. It was good, Mom.

Potato leek soup.

Mom's brilliant idea. Potatoes, leeks, celery root, tarragon, parmesan cheese...this was Cream of Amazing. Served with garlic naan.

One Hundred and Twenty-Eight

Broccoli cheese soup.

It had been raining for a couple of days and soup started to sound really good. I sauteed some celery, potatoes, onions and garlic in a pot with olive oil and spices (cumin, thyme, salt, pepper), added chicken broth and cooked it until the veggies were tender. After this came the broccoli, which I had steamed in the meantime. Then it was immersion blender time. Added tons of cheddar cheese and some half & half. For never having made this before, I was really pleased with the outcome. Good thing I wrote it down....oh wait.

Minestrone soup.

Lunch at the Olive Garden. It's been a really long time since I've had minestrone, and I definitely don't remember it being as good as this was. I was pretty impressed.
