Alysia and I went to one of her favorite Mediterranean restaurants and we had some of the best food ever. Served with rice, pita, hummus, salad, hot sauce and garlic sauce. MAN I love Mediterranean food.
Diced chicken, marinated in soy sauce, toasted sesame oil, dijon, garlic and sriracha. Sauteed with green and red bell peppers and green onions. Served with Thai rice noodles.
Thank you for existing, Trader Joe's. And for providing this seasonal delicacy. Peppermint-infused dark chocolate, white truffle fudge and chunks of peppermint candy cane. I think this is why we were meant to eat.
We had fresh pineapple and Dad wanted dessert. An hour later, we were eating this. The recipe called for canned pineapple and also the syrup, but since I used fresh, I substituted mango/peach/orange juice from Trader Joe's instead. Made it sweeter tasting without being so sugary.
Artichokes, chicken, garlic, caramelized onions and mozzarella on garlic & herb dough, finished with fresh parsley and drizzled with hot sauce. One of, oh I don't know, the best pizzas ever.
Dinner at the Budges' before the "shopping spree" teen activity. Corn tortillas and hard taco shells filled with beef, lettuce, tomato, onion, cilantro and cheese, with black beans and rice on the side. One of my favorites!
Thinly sliced smoked salmon atop mascarpone-spread pumpernickel, with a sprinkle of chives and capers and a squeeze of lemon. I don't like many different kinds of fish, but salmon is definitely one of the few exceptions.
Mom made these, and even though I almost never like sweet potatoes, these were an exception. Sweet potato wedges, tossed with melted butter and cinnamon, seasoned with salt and pepper, then baked.
Upon returning home from my trip to San Francisco, my first stop was El Pollo Loco, definitely on my Top 3 Favorite Fast Food Places list. Thanks, Mom & Dad!!

Josh and I unknowingly used up all the parmesan cheese the same day Aunt Joy was planning to make chicken parmesan, so she decided to switch things up and make it with cheddar cheese, which was just as delicious! Served with another fantastic salad and what I'll call spinach linguine topped with marinara sauce.
Why don't more salads have artichokes? They really should. This was amazing. Snap peas, tomato, black olives and avocado are big stars, too. Served with ranch dressing and some of the best bread ever.
Auntie Joy is amazing! Chicken enchiladas with rice and all sorts of toppings, including fresh avocado, lettuce, tomato, black olives, green onions, sour cream, salsa, enchilada sauce, etc.
One of my favorite breads. Moist pumpkin bread, speckled with whole cranberries. I usually make it around Thanksgiving time, but typically make enough to put some in the freezer too...because it tastes amazing in any season.
