One Hundred and Ninety

Monday, December 20

Pizza.

Cheese pizza with banana peppers, courtesy of Jonathan Walsh.

One Hundred and Eighty-Nine

Sunday, December 19

Hot cocoa.

Nothing like a hot drink when it's, you know, 7 degrees outside.

One Hundred and Eighty-Eight

Saturday, December 18

Salmon cakes.

Went to Ruby Tuesday for dinner. Moist and tasty salmon cakes with lemon butter sauce and sides of mashed potatoes and asparagus.

One Hundred and Eighty-Seven

Friday, December 17

Carrot cake cheesecake.

Carrot cake with carrot cheesecake on top. Yeah. Like two desserts in one. Awesome.

Compliments of Janice Walsh.

One Hundred and Eighty-Six

Thursday, December 16

Chicken shawarma.

Alysia and I went to one of her favorite Mediterranean restaurants and we had some of the best food ever. Served with rice, pita, hummus, salad, hot sauce and garlic sauce. MAN I love Mediterranean food.

One Hundred and Eighty-Five

Wednesday, December 15

Asian chicken.

Diced chicken, marinated in soy sauce, toasted sesame oil, dijon, garlic and sriracha. Sauteed with green and red bell peppers and green onions. Served with Thai rice noodles.

One Hundred and Eighty-Four

Tuesday, December 14

Peppermint bark.

Thank you for existing, Trader Joe's. And for providing this seasonal delicacy. Peppermint-infused dark chocolate, white truffle fudge and chunks of peppermint candy cane. I think this is why we were meant to eat.

One Hundred and Eighty-Three

Monday, December 13

Pineapple Upside-Down Cake.

We had fresh pineapple and Dad wanted dessert. An hour later, we were eating this. The recipe called for canned pineapple and also the syrup, but since I used fresh, I substituted mango/peach/orange juice from Trader Joe's instead. Made it sweeter tasting without being so sugary.

One Hundred and Eighty-Two

Sunday, December 12

Pizza.

Artichokes, chicken, garlic, caramelized onions and mozzarella on garlic & herb dough, finished with fresh parsley and drizzled with hot sauce. One of, oh I don't know, the best pizzas ever.

One Hundred and Eighty-One

Saturday, December 11

Tacos.

Dinner at the Budges' before the "shopping spree" teen activity. Corn tortillas and hard taco shells filled with beef, lettuce, tomato, onion, cilantro and cheese, with black beans and rice on the side. One of my favorites!

One Hundred and Eighty

Friday, December 10

Cheese & crackers.

Brie and cranberry sauce on top of water crackers, with a sprinkle of freshly cracked black pepper.

One Hundred and Seventy-Nine

Thursday, December 9

Grapes.

I like grapes.
They are so delicious.
When I pick grapes,
I get so ambitious
To see if the whole bunch is yummy.
I know they can't always be.

Raisins are okay too.

One Hundred and Seventy-Eight

Wednesday, December 8

Lox.

Thinly sliced smoked salmon atop mascarpone-spread pumpernickel, with a sprinkle of chives and capers and a squeeze of lemon. I don't like many different kinds of fish, but salmon is definitely one of the few exceptions.

One Hundred and Seventy-Seven

Tuesday, December 7

Potato leek soup.

Mom's brilliant idea. Potatoes, leeks, celery root, tarragon, parmesan cheese...this was Cream of Amazing. Served with garlic naan.

One Hundred and Seventy-Six

Monday, December 6

Frozen cranberry margarita.

Nothing says "Happy 21st" like a king size bottle of cranberry margarita from your boss! Kelly Anderson, you are awesome.

One Hundred and Seventy-Five

Sunday, December 5

Sausage patties.

Mom's homemade sausages! These are so tasty. The fennel seed is their crowning glory.

One Hundred and Seventy-Four

Saturday, December 4

Spanakopita.

Stopped at Trader Joe's for snacks-for-dinner. Love Trader Joe's, love snacks-for-dinner, love spanakopita. Love Dad for paying for it.

One Hundred and Seventy-Three

Friday, December 3

Cinnamon sweet potatoes.

Mom made these, and even though I almost never like sweet potatoes, these were an exception. Sweet potato wedges, tossed with melted butter and cinnamon, seasoned with salt and pepper, then baked.

One Hundred and Seventy-Two

Thursday, December 2

Tamales.

Upon returning home from my trip to San Francisco, my first stop was El Pollo Loco, definitely on my Top 3 Favorite Fast Food Places list. Thanks, Mom & Dad!!

Topped with spicy avocado sauce and cilantro, served with rice and pinto beans.

One Hundred and Seventy-One

Wednesday, December 1

Old Rasputin stout.

First legal drink! In honor of my 21st birthday, I was treated to this delicious stout at a pub near San Francisco. Thanks, Aunt Joy & Uncle Ken :)

One Hundred and Seventy

Tuesday, November 30

Beef & sauerkraut.

In honor of Jen's birthday, one of her favorite meals. This was sooo gooood. Served with tater tots (YUP!!) and salad.

Happy birthday again, Jen! I love you :)

One Hundred and Sixty-Nine

Monday, November 29

Chicken "parmesan."

Josh and I unknowingly used up all the parmesan cheese the same day Aunt Joy was planning to make chicken parmesan, so she decided to switch things up and make it with cheddar cheese, which was just as delicious! Served with another fantastic salad and what I'll call spinach linguine topped with marinara sauce.

So. Good.

One Hundred and Sixty-Eight

Sunday, November 28

Cinnamon rolls.

Could Auntie Joy be more of a genius? These cinnamon rolls are basically world-famous, and with good reason.

One Hundred and Sixty-Seven

Saturday, November 27

Spinach-artichoke dip.

Dear Karen Vail,

I adore you. And this dip was amazing. I think I ate half of it.

Sincerely,
Lindsay

One Hundred and Sixty-Six

Friday, November 26

Apple fritter.

Stopped at Allstar Donuts before Black Friday shopping. Love apple fritters and love $1.96 DVDs at WalMart.

One Hundred and Sixty-Five

Thursday, November 25

Thanksgiving dinner.

Clockwise from bottom-left: jellied cranberry sauce, stuffing, Aunt Joy's famous marshmallows & sweet potatoes, mashed potatoes & gravy, mixed fresh veggies, Karen's fantastic homemade bread, turkey, Josh's cranberry/raspberry sauce.

:)

One Hundred and Sixty-Four

Wednesday, November 24

Salad.

Why don't more salads have artichokes? They really should. This was amazing. Snap peas, tomato, black olives and avocado are big stars, too. Served with ranch dressing and some of the best bread ever.

One Hundred and Sixty-Three

Tuesday, November 23

Chicken enchiladas.

Auntie Joy is amazing! Chicken enchiladas with rice and all sorts of toppings, including fresh avocado, lettuce, tomato, black olives, green onions, sour cream, salsa, enchilada sauce, etc.

Love her.

One Hundred and Sixty-Two

Monday, November 22

Chocolate sandwich cookies.

Hooray for cheap knock-offs!

One Hundred and Sixty-One

Sunday, November 21

Cranberry pumpkin bread.

One of my favorite breads. Moist pumpkin bread, speckled with whole cranberries. I usually make it around Thanksgiving time, but typically make enough to put some in the freezer too...because it tastes amazing in any season.

One Hundred and Sixty

Saturday, November 20

Deep-fried rangoons.

Thanks to Jamie Holmes for this: deep-fried cheesecake rangoons, vanilla ice cream and Cherries Jubilee. Just what we needed to complete the success of Kung Fu night.

One Hundred and Fifty-Nine

Friday, November 19

Guinness-braised beef.

Served with horseradish mashed potatoes and stewed veggies. Mom does it again!

Friday, November 19, 2010

One Hundred and Fifty-Eight

Thursday, November 18

Chocolate cookies.

This is my standard chocolate chip cookie recipe, with a couple twists. We experiment with Stevia where I work, so I used that instead of sugar. That means the cookies won't spread, which is what gives them their puffy shape. We didn't have chocolate chips so I used cocoa powder. I thought they were pretty good, and the kids aren't picky...wait, yes they are. They liked them, too.

One Hundred and Fifty-Seven

Wednesday, November 17

Chicken, etc.

Sauteed chicken breast with a fresh apple-cranberry compote (with fresh rosemary and white wine), garlic mashed potatoes and creamed spinach. I actually thought this was really good, even though it was a total experiment.

One Hundred and Fifty-Six

Tuesday, November 16

Pineapple.

One of my favorite fruits. Juicy, ripe, really flavorful...just right.

One Hundred and Fifty-Five

Monday, November 15

Grapefruit.

Not usually a huge grapefruit fan, at least when it's in segments like this...the membrane is pretty tough but these weren't bad. Really juicy and fresh.

One Hundred and Fifty-Four

Sunday, November 14

Macaroni & cheese.

Not macaroni, but some twisty pasta. Turkey and cheese sauce and salt and pepper and hot sauce and sprinkled with paprika...I love mac & cheese. Even if it isn't mac.

Served with tomato.

One Hundred and Fifty-Three

Saturday, November 13

Pasta salad.

I don't remember what this pasta is called, but it's a lot like orzo. Tossed with chopped bell pepper, sliced black olives, parmesan cheese, olive oil, salt & pepper. Totes yum.

One Hundred and Fifty-Two

Friday, November 12

Turkey salad sandwich.

We had leftover turkey in the fridge (when is Thanksgiving...? haha jk Mom) so I made a really simple turkey salad with ranch dressing and celery salt, and slapped it on some toast with tomato. Served with apple and tortilla chips, this was like the best meal I've ever had. Or I was just really hungry.

One Hundred and Fifty-One

Thursday, November 11

Brownies.

Pretty self-explanatory...this is my standard fudge brownie recipe, I make it a lot so that means they're delicious.

One Hundred and Fifty

Wednesday, November 10

Salad.

Avocado, grapefruit, caramelized onions, and Romaine lettuce tossed with a light olive oil vinaigrette. Refreshing and tasty.

One Hundred and Forty-Nine

Tuesday, November 9

Toast with avocado.

Simple, but delectable. Smashed avocado on whole wheat toast, sprinkled with salt & pepper, served with tomato.

One Hundred and Forty-Eight

Monday, November 8

Cheesy chicken & rice casserole.

Sometimes I make things at work and then it's so delicious I make it at home for dinner. I had that "cheesy chicken and rice casserole, possibilitiiieess" song stuck in my head all day, so that's what I called this. Which works, because it's a cheesy casserole with chicken and rice. And broccoli. And worcestershire sauce and sage.

One Hundred and Forty-Seven

Sunday, November 7

Broccoli & cheese quiche.

My mother is pretty great, and so was this quiche she made. Cottage cheese, cheddar cheese, eggs, broccoli...who knew so many delicious things were also delicious together?

One Hundred and Forty-Six

Saturday, November 6

Raspberry torte.

Have I mentioned lately how much I love Trader Joe's?

One Hundred and Forty-Five

Friday, November 5

Chicken curry.

Chicken, potatoes, onions and plenty of other tasty things in this dish by Mom, served with rice and garlic tandoori naan.

One Hundred and Forty-Four

Thursday, November 4

Fajitas.

Sauteed chicken, bell peppers and onions with chili powder and cumin, in a flour tortilla, with sour cream, hot sauce and cilantro. One of my favorite meals ever, for sure.

Thursday, November 4, 2010

One Hundred and Forty-Three

Wednesday, November 3

Apple.

I'm gonna say this was a Fuji. Super sweet and crisp. It was one of the best apples I've had in a long time, so thanks, Costco.

One Hundred and Forty-Two

Tuesday, November 2

Mini tacos.

Thanks to Trader Joe's for these tasty bites. Fried beef tacos, served with sour cream and salsa.

One Hundred and Forty-One

Monday, November 1

Mint chocolate chip ice cream.

Sam decided we needed to make this, so make it we did. It was a great idea, and would have been a success if I'd bought peppermint extract instead of mint extract...because apparently peppermint doesn't taste like toothpaste. Some people enjoyed it, but according to overdramatic sources, Mike almost threw up. I put mine in a blender with a banana, chocolate syrup, milk and ice. And that was delicious. Knowing what we know now, I think we could make this again and not have any complaints.

And yes, it's pink. Because we could.
